My Pulled Pork Tacos are packed with juicy, fall-off-the-bone tender pork, avocado and pineapple salsa/guacamole, sharp white cheddar cheese, and a tangy homemade barbecue sauce. The pork cooks low and slow all day in a slow cooker! Everything about this recipe is customizable, and the outcome is incredible. Pulled Pork Tacos are the perfect dish to make for Cinco de Mayo, or ANY day of the year! Mine was 8 lbs! But you don’t have to make that much!) salt, pepper, garlic powder, onion powder dark soda of choice—Dr. Pepper, Coke/Pepsi, or Root Beer ½ of a fresh pineapple 2 avocados ½ bunch fresh cilantro ¼ of a white onion juice of 1 lime 1 c. ketchup ½ c. water 1 Tbsp. Dijon mustard ¼ c. brown sugar 1 Tbsp. apple cider vinegar 8 oz. brick sharp white cheddar corn tortillas Spray slow cooker with baking spray. Add the pork butt. Season to taste with salt, pepper, and garlic powder. Pour about 3-4 cups of dark soda over the meat—the liquid should come about halfway up the slow cooker. Cover with lid and cook the pork butt on LOW for about 6-8 hours. You can flip the meat halfway through the cook time for more even cooking! Dice the pineapple, avocados, and onions into small pieces. Chop up the cilantro. Add these ingredients to a bowl with juice of 1 lime and a pinch of salt. Stir to combine. Cover and refrigerate for flavors to marry. Bring the ketchup, water, mustard, brown sugar, and vinegar to a simmer. Season to taste with salt, pepper, garlic powder, and onion powder. Simmer for about 5-10 minutes. Taste to check the flavor and adjust as needed. Shred the sharp white cheddar cheese. Warm up and slightly char the corn tortillas over a flame for about 30-40 seconds on the first side and 10-15 seconds on the second side. To assemble the tacos, fill a tortilla with cheese, meat, avocado pineapple relish, and top with the barbecue sauce. ENJOY! Please SUBSCRIBE to my channel!
